Masterchef: a drumroll for Matthieu Hervé

From the very beginning at Château de Montcaud, we knew that our valued kitchen belonged into the hands of a passionate professional. Someone who doesn’t just love his job, but lives it to the fullest extent. Someone who wants to seduce his guests with his art. And with culinary pleasure high on our list of priorities, we needed someone who could bring an appropriate portion of pride and self-confidence to the table. We are happy to say that we have found this someone – ladies and gentlemen, we are pleased to introduce the masterchef of the Château de Montcaud: Matthieu Hervé.

A resume to impress

Self-confidence is no problem for Matthieu, his curriculum vitae is more than impressive, having perfected his profession with some of the best Michelin-starred chefs in Europe and the U.S. His last four positions all were in venues with two or three Michelin stars, and his last boss, Peter Knogl in Basel (Cheval Blanc, Les Trois Rois), was reluctant to let him go.

The love of pleasure

At 32, Matthieu now feels ready to put his own name on the culinary map. Born and bred in the Normandy, he has been drawn to the south of France for a while. Château de Montcaud on the edge of Provence seems to be a near-perfect place to show the culinary world what he can do: two restaurants and an event area, a rural environment and local suppliers that guarantee the freshest ingredients, and the sea and its culinary treasures within reach.

His own boss

We are extremely pleased that there is a mutual love for the project and there is no doubt of great ambitions and full commitment on the part of Matthieu. The hardware for his success is at his disposal: a brand-new, state of the art restaurant kitchen, his own hand-picked team and additionally, a creative workshop in the former pigeon loft of the estate. As for the software, we are convinced that Matthieu brings with him a whole range of necessary skills.

The opening nears

While the last pieces of furniture for the hotel rooms are being delivered and new trees are being planted in the park, Matthieu is working at full speed on his creations for the menus of the two restaurants. Our mouths water just by looking over his shoulder. Join us in counting the days to the opening of the hotel, and a visit to the Bistro de Montcaud or Restaurant de Montcaud.
